Instructions

Step 1 — Prepare the Quinoa: Rinse 1 cup of quinoa under cold water. Mix it with 2 cups of water in a saucepan. Bring to a boil, then reduce the heat. Cover and cook for about 15 minutes until it’s fluffy.

 

Step 2 — Cool the Quinoa: After cooking, let the quinoa sit for 5 minutes off the heat. Fluff it with a fork and let it cool.

 

Step 3 — Chop the Veggies: While the quinoa cools, chop 1 ripe avocado, 1 cup of fresh blueberries, and 1 small cucumber. Put them in a large mixing bowl.

 

Step 4 — Combine Ingredients: Once the quinoa cools, add it to the bowl with the chopped ingredients. Stir gently to mix everything well.

 

Step 5 — Make the Dressing: In a separate small bowl, whisk together the juice of 1 lime, 2 tablespoons of olive oil, salt, and pepper to taste. Pour the dressing over the salad and toss to coat.
