- 1/2 cup diced fresh or frozen mango
- 1/2 cup diced fresh or frozen pineapple
- 1 teaspoon lime juice
- Toppings: toasted coconut flakes, sliced banana, chopped macadamia nuts, granola
Instructions
- Combine chia seeds and coconut milk in a bowl or jar; whisk until evenly mixed.
- Stir in Greek yogurt and protein powder until smooth.
- Add honey or maple syrup and lime juice; mix to incorporate.
- Fold in diced mango and pineapple or layer them on top.
- Refrigerate for at least 2 hours or overnight until thickened.
- Serve topped with toasted coconut, banana slices, nuts, or granola.
Notes
- Stir again after 10 minutes to prevent clumps.
- Keep toppings separate until serving for the best texture.
- Use frozen fruit if fresh mango or pineapple is unavailable.
