  • 1/3 cup chia seeds
  • 1 1/4 cups unsweetened coconut milk (or almond milk)
  • 1/2 cup plain Greek yogurt (or plant-based alternative)
  • 1 scoop (about 25 g) vanilla protein powder (optional)
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 cup diced fresh or frozen mango
  • 1/2 cup diced fresh or frozen pineapple
  • 1 teaspoon lime juice
  • Toppings: toasted coconut flakes, sliced banana, chopped macadamia nuts, granola

Instructions

  1. Combine chia seeds and coconut milk in a bowl or jar; whisk until evenly mixed.
  2. Stir in Greek yogurt and protein powder until smooth.
  3. Add honey or maple syrup and lime juice; mix to incorporate.
  4. Fold in diced mango and pineapple or layer them on top.
  5. Refrigerate for at least 2 hours or overnight until thickened.
  6. Serve topped with toasted coconut, banana slices, nuts, or granola.

Notes

  • Stir again after 10 minutes to prevent clumps.
  • Keep toppings separate until serving for the best texture.
  • Use frozen fruit if fresh mango or pineapple is unavailable.
  • Chill overnight for the creamiest result.
