For the Pumpkin Butter:

  • 2 cups pumpkin puree
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

For Serving:

  • Toast, bagels, or pancakes
  • Oatmeal or yogurt
  • Baked goods fillings (cake batters, pastries)

Instructions

Step 1 — Prepare the Pumpkin: Start with a fresh pumpkin. Cut it in half, remove the seeds, and place it on a baking sheet. Roast at 400°F for 45 minutes or until tender. Let it cool, then scoop out the flesh.

Step 2 — Blend the Ingredients: In a blender or food processor, mix the roasted pumpkin flesh, sugar, cinnamon, nutmeg, cloves, and a pinch of salt. Blend until smooth.

Step 3 — Cook the Mixture: Pour the blended mixture into a saucepan over medium heat. Stir occasionally and bring it to a gentle simmer. Cook for about 20-25 minutes until it thickens to a spreadable consistency.

Step 4 — Adjust Flavor: Taste your homemade pumpkin butter. If desired, add more spices or sweetener to suit your preference.

Step 5 — Store Properly: Transfer the pumpkin butter into sterilized jars. Seal tightly and let it cool to room temperature. Refrigerate and enjoy within a couple of weeks.
