Description

  • 4 medium bananas, ripe but firm
  • 4 tablespoons unsalted butter (or coconut oil)
  • 1/2 cup packed brown sugar (or 1/2 cup granulated sugar + 1 tsp molasses)
  • 1/2 teaspoon ground cinnamon (optional)
  • Pinch of fine sea salt
  • 1 cup chopped pecans or walnuts, toasted
  • 6 small flour tortillas or 6 small corn tortillas
  • Optional: vanilla ice cream or whipped cream, chocolate chips, extra caramel sauce, flaky sea salt

Instructions

  1. Toast nuts:  Heat a dry skillet over medium and toast nuts 5–7 minutes, stirring until fragrant; transfer to a bowl.
  2. Make caramel:  Add butter to the skillet and melt; stir in brown sugar and cook until bubbly and slightly thickened, about 2 minutes.
  3. Caramelize bananas:  Slice bananas lengthwise or into rounds; add to skillet and cook 1–2 minutes per side until golden and sauced.
  4. Warm tortillas: Heat tortillas in a separate skillet or microwave until pliable or crisp to preference.
  5. Assemble tacos:  Place bananas on tortillas, sprinkle toasted nuts, drizzle extra caramel, add a pinch of flaky salt, and top with ice cream or chocolate if desired. Serve immediately.

Notes

  • Toast nuts just until fragrant to avoid bitterness.
  • Slice bananas right before cooking to prevent browning.
  • Watch caramel closely—it can burn quickly on high heat.
  • Serve immediately for the best texture contrast.
